Ingredients

  • 2 pounds Chicken wings
  • 1 cup Apple wood chips
  • 1/4 cup Soy sauce
  • 2 tablespoons Miso paste (white or yellow)
  • 2 tablespoons Mirin
  • 2 tablespoons Honey
  • 1 tablespoon Rice vinegar
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 1 teaspoon Sesame oil
  • 2 tablespoons Toasted sesame seeds
  • 2 tablespoons Green onions, sliced(optional)

Instructions

  1. 1

Preheat a smoker to 225°F (107°C) and add the apple wood chips; let them begin to smolder.

  2. 2

Pat the chicken wings dry, then place them on a rack and smoke for 45 minutes, turning once halfway through.

  3. 3

While the wings smoke, combine soy sauce, miso paste, mirin, honey, rice vinegar, garlic, ginger, and sesame oil in a saucepan; simmer 5‑7 minutes until slightly thickened.

  4. 4

After 45 minutes of smoking, brush the wings with half of the teriyaki‑miso glaze and return to the smoker for another 20 minutes, brushing again halfway.

  5. 5

Remove wings from the smoker, toss with the remaining glaze, sprinkle toasted sesame seeds and optional green onions, and let rest 5 minutes before serving.

  6. 6

Serve warm with a side of steamed rice or salad.
