Ingredients
- 18 quail eggs
- 12 oz daikon radish
- 3 cups water
- 1/2 cup Japanese soy sauce (shoyu)
- 1/2 cup low-sodium chicken or vegetable broth
- 2 tbsp green tea leaves (or 2 tea bags)
- 1 tbsp ginger
- 2 cloves garlic
- 1 tbsp rice vinegar
- 1 tbsp mirin (or low-carb mirin-style seasoning)
- 1 tsp konjac powder (glucomannan) or xanthan gum
- 1 tsp neutral oil(optional)
Instructions
- 1
Prep (20 minutes): Peel and trim daikon; cut into 1-inch thick rounds or half-moons. Lightly bruise the ginger and smash the garlic cloves. If using loose green tea, measure 2 tbsp; if using tea bags, have them ready.
- 2
Start the broth (5 minutes): In a small pot, combine water, soy sauce, broth, rice vinegar, mirin, ginger, garlic, and green tea. Bring to a gentle simmer and simmer 2–3 minutes to infuse. Turn off heat and let steep 5 minutes, then strain out tea solids (or remove tea bags).
- 3
Simmer the daikon (15 minutes): Return the infused broth to a simmer. Add daikon and cook until just tender but not falling apart, about 12–15 minutes. Keep the heat at a steady low simmer.
- 4
Add eggs and slow-simmer (25 minutes): Add quail eggs to the pot. Reduce to a very gentle simmer and cook 20–25 minutes, turning occasionally, until the eggs are evenly flavored and the daikon is fully tender.
- 5
Low-carb thickening + finish (5 minutes): Whisk konjac powder with a splash of warm broth (or whisk xanthan gum into a small amount of cold broth) and stir into the simmering pot. Simmer 1–2 minutes until lightly thickened, then turn off heat. Rest 5 minutes to set the texture before serving.
