Ingredients

  • 170 g salmon fillet
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp mirin (or rice vinegar + a little sugar)
  • 1 clove garlic(optional)
  • 0.5 tsp fresh ginger(optional)
  • 1 tsp cornstarch(optional)
  • 1 tbsp water(optional)
  • 2 cups broccoli florets
  • 1 tsp neutral oil
  • 1 cup cooked short-grain rice

Instructions

  1. 1

If needed, pat salmon dry. Season lightly with salt and pepper.

  2. 2

In a bowl, combine soy sauce, honey, and mirin. Add garlic/ginger if using.

  3. 3

Steam or microwave broccoli until bright green and tender-crisp, about 3–4 minutes.

  4. 4

Heat a nonstick pan over medium heat. Add a tiny bit of oil and sear salmon skin-side down (or presentation side down) 3–4 minutes, then flip 2–3 minutes until cooked.

  5. 5

Pour teriyaki sauce into the pan. Simmer 1–2 minutes to glaze. If you want it thicker, stir cornstarch with water and add; simmer 30–60 seconds.

  6. 6

Serve salmon and broccoli over rice, spooning extra glaze on top.
