Ingredients

  • 300 g pork loin, thinly sliced
  • 2 tbsp white miso paste
  • 2 tbsp sake
  • 1 tbsp mirin
  • 1 tbsp soy sauce
  • 1 tbsp gochujang
  • 1 tbsp toasted sesame oil
  • 2 cloves garlic, minced
  • 1 tsp honey
  • 2 stalks green onions, thinly sliced
  • 8 leaves butter lettuce leaves
  • 1 tsp toasted sesame seeds(optional)

Instructions

  1. 1

Whisk miso, sake, mirin, and half the soy sauce in a bowl. Add pork slices, toss to coat, and marinate 15 minutes while you prepare the sauce.

  2. 2

Make the ssamjang-style sauce: mix gochujang, remaining soy sauce, sesame oil, garlic, honey, green onions, and sesame seeds in a small bowl. Set aside.

  3. 3

Preheat a grill pan or heavy skillet over medium-high heat. Remove pork from marinade, letting excess drip off.

  4. 4

Grill pork slices 2-3 minutes per side until caramelized and cooked through, working in batches. Total cook time about 10-12 minutes.

  5. 5

Let pork rest 2 minutes, then slice into bite-size pieces if needed.

  6. 6

Serve pork, sauce, and lettuce leaves separately. To eat, spread a little sauce on a lettuce leaf, add pork, wrap, and enjoy.
