Ingredients
- 5 cups Spinach
- 2 large Eggs(optional)
- 1.5 lb Salmon fillets
- 3 tbsp White miso paste
- 2 tbsp Mirin (or rice vinegar + a little sweetener)
- 1 tbsp Soy sauce (low-sodium)
- 1 tsp Brown sugar (or low-carb sweetener)(optional)
- 1 clove Garlic, grated(optional)
- 1 tsp Ginger, grated(optional)
- 2 tbsp Butter
- 1 tbsp Neutral oil
- 1 tsp Rice vinegar
- 1 tbsp Lemon juice(optional)
- 1/2 tsp Black pepper
Instructions
- 1
Pat salmon dry and season with black pepper.
- 2
In a small bowl, whisk miso, mirin, soy sauce, rice vinegar, and optional sweetener. Add grated garlic/ginger if using.
- 3
Heat a nonstick skillet over medium-high with neutral oil. Place salmon skin-side down (if applicable). Sear 3–4 minutes.
- 4
Flip, reduce heat to medium, and brush generously with miso glaze.
- 5
Cook 3–5 minutes more, brushing again every 1–2 minutes until lacquered (avoid burning by lowering heat if needed).
- 6
While salmon cooks: melt butter in a pan over medium. Add spinach and stir until wilted, 2–3 minutes. Season lightly with a pinch of salt if needed.
- 7
Serve salmon over the spinach butter sauce. Optional: finish with a squeeze of lemon.
