Ingredients
- 4 pieces salmon fillets
- 3 tbsp white miso paste
- 1 tbsp soy sauce (or tamari)
- 1 tbsp rice vinegar
- 1 tsp honey
- 2 tbsp poppy seeds
- 2 tsp olive oil
- 2 cloves garlic
- 1 tsp ginger
- 10 oz spinach
- 8 oz baby bok choy
- 2 stalks green onions(optional)
Instructions
- 1
Prep (15 minutes): Pat salmon dry. In a bowl, whisk miso paste, soy sauce, rice vinegar, and honey until smooth. Stir in poppy seeds. Mince garlic and grate ginger. Chop bok choy and slice green onions (if using).
- 2
Broil glaze (18 minutes total cook time): Preheat broiler to high. Brush or spoon a thin layer of miso mixture over salmon, then press remaining poppy-seed glaze onto the surface. Place salmon on a foil-lined sheet pan.
- 3
Cook: Broil salmon 8 minutes, then rotate the pan and broil 6–10 minutes more, until salmon flakes easily and the glaze looks caramelized (total broil time: 14–18 minutes depending on thickness).
- 4
Sauté greens during the final minutes: Heat olive oil in a large skillet over medium-high. Add garlic and ginger and sauté 30–45 seconds. Add bok choy stems first, sauté 2 minutes, then add spinach and sauté 1–2 minutes until wilted. Season lightly with a small splash of soy sauce if needed.
- 5
Serve: Plate sautéed greens and top with miso-glazed salmon. Finish with green onions if using.
