Ingredients

  • 1 lb salmon fillet
  • 2 medium zucchini
  • 2 tbsp white miso
  • 2 tbsp unsalted butter
  • 1 tbsp soy sauce
  • 1 tbsp mirin(optional)
  • 1 clove garlic
  • 1 tbsp neutral oil
  • 0.5 tsp black pepper
  • 2 stalks green onions(optional)

Instructions

  1. 1

Slice zucchini into 1/2-inch coins. Lightly salt and let sit 5 minutes, then pat dry.

  2. 2

Cut salmon into 8 pieces. Season with black pepper.

  3. 3

In a small bowl mix miso, butter, soy sauce, minced garlic, and mirin (if using) into a smooth paste.

  4. 4

Heat skillet over medium-high with neutral oil. Sear zucchini coins 2–3 minutes per side until lightly browned; remove to a plate.

  5. 5

Sear salmon 3–4 minutes per side until just cooked (depending on thickness).

  6. 6

Lower heat to medium. Add miso-butter mixture and stir until glossy; spoon glaze over salmon.

  7. 7

Assemble: place zucchini coins on a platter and top with glazed salmon pieces.

  8. 8

Garnish with sliced green onions if using. Serve hot.
