Ingredients

  • 1 lb salmon fillets
  • 3 tbsp white miso paste
  • 2 tbsp unsalted butter (softened)
  • 1 tbsp mirin (or rice vinegar + a pinch of sugar substitute)(optional)
  • 1 tsp soy sauce(optional)
  • 1 clove garlic (minced)(optional)
  • 4 cups spinach
  • 1 tsp cooking oil
  • 1 tbsp lemon juice(optional)
  • 1/2 tsp black pepper(optional)

Instructions

  1. 1

Preheat broiler to high. Line a baking tray with foil and lightly oil it.

  2. 2

In a bowl, mix miso paste, softened butter, mirin, and (if using) soy sauce and garlic until smooth.

  3. 3

Pat salmon dry, season with pepper, and spread miso-butter glaze over the top.

  4. 4

Broil 8–12 minutes (depending on thickness) until the salmon flakes and the glaze is bubbling.

  5. 5

While salmon broils, heat a skillet with a small amount of oil. Sauté spinach 60–90 seconds until just wilted.

  6. 6

Season spinach with lemon juice (optional) and a pinch of salt if needed.

  7. 7

Serve salmon with spinach. Spoon any pan glaze over the fish.
