Ingredients

  • 1 lb salmon fillet (skinless, cut into 1-inch cubes)
  • 4 cups spinach
  • 2 tbsp white miso
  • 2 tbsp unsalted butter
  • 1 tbsp soy sauce (or tamari)(optional)
  • 1 tbsp mirin (or rice vinegar + water)(optional)
  • 1 clove garlic (minced)(optional)
  • 1 tbsp neutral oil
  • 0.5 tsp black pepper
  • 0.5 tsp lemon zest(optional)

Instructions

  1. 1

Pat salmon cubes dry; season with black pepper.

  2. 2

In a small bowl, mix miso with butter. If using, stir in soy sauce and mirin to loosen.

  3. 3

Heat a skillet over medium-high with oil. Sear salmon cubes 2–3 minutes, turning until lightly browned.

  4. 4

Reduce heat to medium. Add miso-butter mixture and toss salmon gently until glossy and just cooked through (about 2 more minutes).

  5. 5

In a second pan (or cleared skillet), sauté spinach with a splash of water for 1–2 minutes until wilted. Season lightly with pepper.

  6. 6

Serve salmon bites over/alongside spinach. Finish with lemon zest if desired.
