Ingredients

  • 250 g Beef (thinly sliced, chuck or similar)
  • 300 g Daikon radish
  • 200 g Potatoes
  • 1 small Onion
  • 3 tbsp Soy sauce
  • 2 tbsp Mirin
  • 2 tbsp Sake (or dry sherry)(optional)
  • 1 tbsp Sugar
  • 2 cups Dashi (or water + 1 tsp instant dashi)
  • 1 tbsp Neutral oil(optional)
  • to taste Salt(optional)

Instructions

  1. 1

Prep (15 minutes): Cut daikon into 1-inch chunks, potatoes into 1-inch pieces, and slice onion. If using thin-sliced beef, keep it ready for quick browning.

  2. 2

Brown (about 5 minutes): Heat oil in a pot over medium-high heat. Brown the beef lightly, then add onion and cook until fragrant and slightly softened.

  3. 3

Simmer (about 25 minutes): Add daikon, potatoes, soy sauce, mirin, sugar, and dashi. Bring to a simmer, then reduce heat to medium-low and cook until daikon and potatoes are tender and the sauce is slightly reduced, stirring occasionally.

  4. 4

Finish (about 5 minutes): Taste and adjust with a pinch of salt if needed. Serve hot with the simmering sauce.
