Ingredients
- 2 cups Red lentils (Misir), rinsed
- 2 large Red onion, finely diced
- 3 tablespoons Berbere spice blend
- 4 cloves Garlic, minced
- 1 tablespoon Fresh ginger, grated
- 0.25 cup Vegetable oil or Niter Kibbeh
- 2 tablespoons Tomato paste
- 4 cups Vegetable broth or water
- 1 teaspoon Salt
- 2 tablespoons Fresh cilantro for garnish(optional)
Instructions

Set the Instant Pot to 'Sauté' mode and add the oil or Niter Kibbeh.

Add the diced onions and cook for 5-7 minutes until softened and slightly browned, adding a splash of water if they stick.

Stir in the garlic, ginger, and Berbere spice, toasting for 1 minute until fragrant.

Mix in the tomato paste and salt, stirring constantly to combine with the aromatics.

Add the rinsed red lentils and vegetable broth, then stir well to ensure nothing is stuck to the bottom of the pot.

Close the lid, set the valve to 'Sealing', and pressure cook on High for 5 minutes.

Allow a natural pressure release for 10 minutes, then carefully release any remaining steam.

Stir the lentils vigorously to achieve a creamy consistency and serve hot with Injera.
