Ingredients

  • 1 cup sushi rice
  • 1.2 cups water
  • 2 tablespoons rice vinegar
  • 1 teaspoon sugar (for rice seasoning)
  • 0.5 teaspoon salt (for rice seasoning)
  • 2 nori sheets
  • 4 sticks imitation crab sticks
  • 0.5 avocado
  • 0.25 cucumber
  • 2 tablespoons soy sauce(optional)
  • 2 tablespoons pickled ginger(optional)

Instructions

  1. 1

Rinse the sushi rice until water runs clear, then combine with water in a pot and bring to a boil; cover, reduce heat, and simmer for 10 minutes, then remove from heat and let sit, covered, for 10 minutes.

  2. 2

While the rice rests, mix rice vinegar, sugar, and salt until dissolved, then gently fold the mixture into the cooked rice and spread the rice on a tray to cool to room temperature.

  3. 3

Lay a nori sheet shiny side down on a bamboo mat, spread a thin, even layer of rice over the nori, leaving a 1‑inch border at the top.

  4. 4

Arrange strips of avocado, cucumber, and imitation crab along the bottom edge of the rice, then roll tightly using the mat, sealing the edge with a little water.

  5. 5

Slice each roll into 6–8 pieces with a sharp, wet knife and serve with soy sauce and pickled ginger.
