Ingredients

  • 8 oz imitation crab sticks
  • 1 cucumber
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp soy sauce
  • 1 tbsp toasted sesame seeds
  • 1/2 tsp salt
  • 1 tsp sesame oil(optional)

Instructions

  1. 1

Thinly slice the cucumber, toss with salt, and let sit 10 minutes while you prepare the rest (this draws out excess water).

  2. 2

In a small saucepan over low heat, warm the rice vinegar, sugar, and soy sauce for about 5 minutes, stirring until the sugar dissolves. Let cool slightly.

  3. 3

Gently squeeze the cucumber slices dry and pat with a paper towel.

  4. 4

Shred the imitation crab into bite-sized pieces.

  5. 5

In a bowl, combine cucumber, crab, and the cooled dressing; drizzle with sesame oil if using and toss gently.

  6. 6

Chill briefly, sprinkle with sesame seeds, and serve cold.
