Huevos Rancheros
Fried eggs served over lightly fried corn tortillas and topped with a warm tomato-chili salsa.

Ingredients
- 4 Corn tortillas
- 4 Large eggs
- 1 cup Tomato sauce or crushed tomatoes
- 4 oz Diced green chilies
- 1 cup Refried beans
- 2 tbsp Vegetable oil
- 1 handful Cilantro(optional)
- 2 tbsp Cotija cheese(optional)
- 0.25 cup Onion, finely diced

In a small saucepan, sauté the diced onion until translucent. Add the tomato sauce and green chilies. Simmer on low for 10 minutes.

In a small skillet, warm the refried beans over medium heat. Add a splash of water if they are too thick.

In a separate frying pan, heat 1 tablespoon of oil. Lightly fry each tortilla for about 30 seconds per side until soft but slightly crisp. Set aside on paper towels.

In the same pan, add the remaining oil and fry the eggs sunny-side up or over-easy until the whites are set but yolks are still runny.

To assemble, place two tortillas on each plate. Spread a layer of warm refried beans over the tortillas.

Place one fried egg on each tortilla.

Spoon the warm tomato-chili sauce over the eggs.

Garnish with crumbled cotija cheese and fresh cilantro before serving immediately.
