Halloumi and Roasted Pepper Skewers

Grilled salty halloumi cheese and colorful vegetables drizzled with a balsamic glaze.

Ingredients

  • 250 g Halloumi cheese
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 2 tbsp Olive oil
  • 1 tsp Dried oregano
  • 1 tbsp Lemon juice
  • 0.5 tsp Garlic powder
  • 1 tbsp Fresh parsley(optional)

Instructions

    Soak wooden skewers in water for 20 minutes to prevent burning.

    Cut the halloumi cheese into 1-inch cubes.

    De-seed the bell peppers and cut them into 1-inch squares.

    In a small bowl, whisk together olive oil, lemon juice, oregano, and garlic powder.

    Thread the halloumi and pepper pieces onto the skewers, alternating between them.

    Brush the skewers generously with the herb oil mixture.

    Preheat a grill pan or outdoor grill to medium-high heat.

    Grill the skewers for 2-3 minutes per side, or until the cheese is golden brown and the peppers are slightly charred.

    Garnish with fresh parsley before serving.
