Greek Tortellini Salad

Ingredients

  • 20 oz Cheese tortellini
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 0.5 cup Kalamata olives
  • 0.25 cup Red onion
  • 0.5 cup Feta cheese
  • 0.75 cup Greek vinaigrette dressing
  • 2 tbsp Fresh parsley(optional)

Instructions

    Cook the cheese tortellini in a large pot of salted boiling water according to package directions. Drain and rinse with cold water to stop the cooking process.

    While the pasta cooks, dice the cucumber, halve the cherry tomatoes, and finely slice the red onion.

    In a large mixing bowl, combine the cooled tortellini, cucumber, tomatoes, olives, and red onion.

    Pour the Greek vinaigrette over the salad and toss gently to coat all ingredients.

    Fold in the crumbled feta cheese and chopped parsley.

    Refrigerate for at least 30 minutes before serving to allow flavors to meld.
