Ingredients

  • 2 cups Rotisserie chicken, shredded
  • 1 large Cucumber, chopped
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Red onion, thinly sliced
  • 0.5 cup Kalamata olives, pitted
  • 0.5 cup Feta cheese, crumbled
  • 3 tablespoons Extra virgin olive oil
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Dried oregano
  • to taste Salt and black pepper(optional)

Instructions

    In a large mixing bowl, combine the chopped cucumber, cherry tomatoes, red onion, and Kalamata olives.

    Add the shredded rotisserie chicken to the vegetable mixture.

    In a small jar or bowl, whisk together the olive oil, red wine vinegar, and dried oregano to create the dressing.
