Ingredients

  • 12 oz ground beef (80/20)
  • 2 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 1/2 cup plain Greek yogurt
  • 1 tsp honey(optional)
  • 4 cups romaine lettuce hearts
  • 2 tbsp green onions, sliced(optional)
  • 1 tsp cooked rice vinegar or rice vinegar(optional)
  • 2 tbsp water(optional)

Instructions

  1. 1

Prep (about 15 minutes): Mince the garlic and slice the green onions. Separate romaine leaves into cups and pat dry.

  2. 2

Cook (about 15 minutes): Heat a large skillet over medium-high heat. Add sesame oil, then cook the ground beef until browned, breaking it up, about 8–10 minutes.

  3. 3

Stir in gochujang, soy sauce, garlic, and (if using) rice vinegar and water. Cook 3–5 minutes until the beef is glossy and the sauce coats the meat.

  4. 4

Make the lime-yogurt drizzle: In a small bowl, mix Greek yogurt with lime juice and honey (if using).

  5. 5

Assemble: Spoon the gochujang beef into lettuce cups and drizzle with lime-yogurt. Top with green onions if desired.
