  • 1 1/2 cups Brown Teff Flour
  • 1/2 cups Tapioca Starch
  • 1 1/4 cups Warm Water
  • 2 tablespoons Olive Oil
  • 1 teaspoon Xanthan Gum
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Sea Salt
  • 1 teaspoon Honey(optional)
  • 1/4 teaspoon Garlic Powder(optional)
  • 2 tablespoons Additional Olive Oil for frying

Instructions

    In a large mixing bowl, whisk together the teff flour, tapioca starch, xanthan gum, baking powder, salt, and garlic powder.

    Make a well in the center and pour in the warm water, olive oil, and honey.

    Stir the mixture vigorously with a wooden spoon until a smooth, thick batter forms; it should be thicker than pancake batter but pourable.

    Let the batter rest for 10 minutes to allow the teff flour to fully hydrate and the xanthan gum to set.

    Heat a non-stick skillet or cast-iron griddle over medium heat and lightly brush with olive oil.

    Pour approximately 1/3 cup of batter onto the hot skillet and spread it into a 6-inch circle using the back of a spoon.

    Cook for 2-3 minutes until the edges look dry and small bubbles appear on the surface, then flip carefully.

    Cook the second side for another 2 minutes until browned and cooked through, then transfer to a clean towel to keep warm.
