Garlic Shrimp Fried Rice

Ingredients
- 3 cups cooked white rice, chilled
- 1/2 lb shrimp, peeled and deveined
- 4 cloves garlic, minced
- 2 large eggs, beaten
- 1/2 cup frozen peas and carrots
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- 2 stalks green onions, sliced(optional)
Instructions

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove shrimp from the pan and set aside.

In the same pan, add the remaining oil and the minced garlic. Sauté for 30 seconds until fragrant.

Pour in the beaten eggs and scramble quickly until just set.

Add the chilled rice and frozen peas and carrots to the pan. Break up any rice clumps with a spatula.

Stir in the soy sauce and sesame oil, tossing everything together for 3-5 minutes until the rice is heated through and slightly crispy.

Return the cooked shrimp to the pan and toss with the green onions.
