Ingredients

  • 3 medium yellow onions, thinly sliced
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 8 oz dry pasta (such as tagliatelle or fettuccine)
  • 1.5 cups beef or vegetable broth
  • 0.5 cup dry white wine
  • 2 tsp fresh thyme leaves
  • 3 cloves garlic, minced
  • 1 cup Comté or Gruyère cheese, grated
  • to taste salt and black pepper
  • 2 tbsp fresh chives or parsley, chopped(optional)

Instructions

  1. 1

Bring a large pot of salted water to a boil for the pasta.

  2. 2

Meanwhile, melt the butter with the olive oil in a large skillet over medium heat. Add the sliced onions with a pinch of salt and cook, stirring occasionally, until deeply golden and caramelized, about 15 minutes.

  3. 3

Add the garlic and thyme and cook for 1 minute until fragrant. Pour in the white wine and scrape up any browned bits; simmer until mostly reduced, about 2 minutes.

  4. 4

Stir in the broth and simmer gently while you cook the pasta until al dente, about 8-10 minutes.

  5. 5

Using tongs, transfer the pasta directly into the skillet with the onion sauce. Add a splash of pasta water and toss over medium heat until the sauce coats the noodles, 1-2 minutes.

  6. 6

Remove from heat, stir in the grated Comté until melted and creamy, and season with salt and pepper. Top with chives or parsley and serve immediately.
