Ingredients
- 500 g Fresh Strawberries
- 500 ml Double Cream
- 4 large Meringue Nests
- 1 tablespoon Icing Sugar(optional)
- 4 sprigs Fresh Mint Leaves(optional)

Hull and slice half of the strawberries. Place them in a bowl and crush them slightly with a fork to release the juices.

Slice the remaining strawberries into halves or quarters and set aside.

In a large chilled bowl, whip the double cream with the icing sugar until soft peaks form.

Roughly break the meringue nests into bite-sized chunks.

Gently fold the broken meringue and all the strawberries (crushed and sliced) into the whipped cream.

Spoon the mixture into serving bowls or glasses and garnish with mint leaves if desired. Serve immediately to keep the meringue crunchy.
