Ingredients

  • 3 cups Chicken or vegetable broth
  • 2 large Eggs
  • 1 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 1 tbsp Sesame seeds (toasted)
  • 2 tbsp Scallions (green parts), thinly sliced
  • 1 clove Garlic (minced)(optional)
  • 1/2 tsp Ginger (grated)(optional)
  • 1/4 tsp Salt (to taste)(optional)
  • 1/8 tsp White pepper (or black pepper), to taste(optional)

Instructions

  1. 1

Prep (10 minutes): Crack eggs into a bowl and beat until smooth. Slice scallions. Mince garlic and grate ginger if using.

  2. 2

Cook (15 minutes): In a small pot, bring broth to a gentle simmer. Stir in soy sauce, garlic, ginger (if using), and pepper; simmer 5 minutes to lightly flavor the broth.

  3. 3

Cook (15 minutes): Reduce heat to low so the broth stays at a gentle simmer. Pour the beaten egg in a thin stream while stirring the pot in one direction to create silky ribbons. Cook 2–3 minutes until just set.

  4. 4

Cook (15 minutes): Turn off the heat. Stir in sesame oil, then ladle into bowls and top with toasted sesame seeds and scallions.
