Ingredients

  • 4 cups dashi stock (or 2 cups water + 1 tsp dashi powder)
  • 3 tablespoons white miso paste
  • 6 oz silken tofu, cut into 1/2-inch cubes
  • 1 tablespoon dried wakame seaweed
  • 2 tablespoons scallions, thinly sliced
  • 1 teaspoon soy sauce(optional)

Instructions

  1. 1

Soak the dried wakame in warm water for 5 minutes, then drain and set aside. Meanwhile, cut the silken tofu into 1/2-inch cubes and slice the scallions.

  2. 2

In a medium pot, bring the dashi stock to a gentle simmer over medium heat, about 3-4 minutes. Add the tofu cubes and warmed wakame and simmer for 2 minutes.

  3. 3

Ladle a small amount of hot dashi into a bowl with the miso paste and whisk until smooth, then stir the dissolved miso back into the pot. Do not boil after adding miso, as high heat dulls its flavor.

  4. 4

Taste and add soy sauce if desired. Ladle into 2 bowls, garnish with scallions, and serve immediately.
