Ingredients

  • 200 g spaghetti
  • 3 tbsp white miso paste
  • 3 tbsp unsalted butter
  • 4 scallions
  • 2 cloves garlic
  • 1/2 cup pasta water
  • 1 tbsp toasted sesame seeds(optional)
  • to taste black pepper(optional)

Instructions

  1. 1

Bring a pot of salted water to a boil and cook the spaghetti according to package directions until al dente, about 10-11 minutes. Reserve 1/2 cup pasta water before draining.

  2. 2

While the pasta cooks, melt the butter in a large skillet over medium heat. Add the minced garlic and the white parts of the scallions and cook for 2 minutes until fragrant.

  3. 3

Whisk the miso paste into the skillet with 1/4 cup of the reserved pasta water until smooth, forming a glossy sauce.

  4. 4

Add the drained pasta to the skillet and toss well, adding more pasta water a splash at a time until the sauce coats every strand, about 2 minutes.

  5. 5

Remove from heat, top with sliced scallion greens, sesame seeds, and black pepper. Serve immediately.
