  • 3 tbsp White miso paste
  • 4 cups Chicken or vegetable broth
  • 2 Eggs
  • 3 Scallions
  • 2 cloves Garlic
  • 1 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 2 cups Baby spinach(optional)
  • to taste Chili oil or sriracha(optional)

Instructions

  1. 1

Bring a small pot of water to a boil and cook the eggs for 6-7 minutes for soft-boiled. Transfer to ice water, peel, and halve.

  5. 5

Ladle the hot miso broth over the noodles. Top with spinach (it will wilt), soft-boiled egg halves, sliced scallions, and chili oil if desired. Serve immediately.
