
Dominican Patacones With Mojo

Ingredients
- 3 large Green plantains
- 2 cups Vegetable oil for frying
- 6 pieces Garlic cloves, minced
- 0.25 cup Extra virgin olive oil
- 0.25 cup Sour orange juice (or lime/orange mix)
- 1 teaspoon Salt
- 0.5 teaspoon Dried oregano
- 1 cup Warm water
- 1 tablespoon Fresh cilantro, chopped(optional)

Peel the green plantains and cut them into 1-inch thick rounds.

Heat the vegetable oil in a deep skillet over medium heat until it reaches approximately 325°F.

Fry the plantain chunks for about 3-4 minutes per side until they are light golden and softened, but not browned.

Remove the plantains from the oil and drain on paper towels; while still warm, flatten them into discs using a tostonera or the bottom of a heavy glass.

Prepare a quick dip by mixing the warm water with half of the salt; dip each flattened disc briefly into the salted water and pat dry.

Increase oil heat to 375°F and fry the flattened discs a second time for 2-3 minutes until they are deep golden and crispy.

To make the Mojo, whisk together the minced garlic, olive oil, citrus juice, remaining salt, and oregano in a small bowl.

Drain the crispy patacones on paper towels, sprinkle with extra salt if desired, and serve immediately with the Mojo sauce for dipping.
