Ingredients

  • 300 g Beef sirloin (trimmed)
  • 3 tbsp Soy sauce (low-sodium)
  • 2 tbsp Rice vinegar
  • 1 tbsp Fresh lemon juice
  • 1 tbsp Mirin
  • 1 tsp Grated ginger
  • 100 g Radish, thinly sliced
  • 6 leaves Shiso leaves
  • 1 tbsp Olive oil
  • ½ tsp Salt
  • ¼ tsp Black pepper

Instructions

  1. 1

Season the beef sirloin with salt and black pepper, then heat olive oil in a skillet over high heat until shimmering.

  2. 2

Sear the beef for 45 seconds per side until a brown crust forms, keeping the interior rare; remove and let rest 5 minutes before slicing thinly against the grain.

  3. 3

In a small bowl, whisk together soy sauce, rice vinegar, lemon juice, mirin, and grated ginger to create the ponzu sauce.

  4. 4

Arrange sliced radish on a serving plate, place the beef tataki slices on top, drizzle with ponzu sauce, and garnish with shiso leaves.

  5. 5

    Serve immediately.
