Creamy Avocado Pasta

Ingredients

  • 200 grams Spaghetti or Linguine
  • 2 whole Ripe Avocados
  • 1 cup Fresh Spinach
  • 2 cloves Garlic
  • 1 tablespoon Lemon Juice
  • 2 tablespoons Olive Oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 0.5 cup Cherry Tomatoes(optional)

    Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.

    While the pasta cooks, place the avocado flesh, spinach, garlic, lemon juice, olive oil, salt, and pepper into a blender or food processor.

    Blend until the sauce is completely smooth and creamy.

    Reserve about 1/4 cup of the pasta cooking water before draining the pasta.

    Drain the pasta and return it to the pot. Pour the avocado sauce over the pasta and toss to coat, adding a splash of the reserved pasta water if needed to reach your desired consistency.

    Serve immediately, topped with halved cherry tomatoes if desired.
