Ingredients

  • 10 large Eggs
  • 2 cups Spinach
  • 1 cup Cheddar cheese (shredded)
  • 2 tbsp Cream cheese(optional)
  • 1/2 tsp Garlic powder(optional)
  • 1/4 tsp Onion powder(optional)
  • 1 tbsp Butter(optional)
  • 1/2 tsp Salt(optional)
  • 1/4 tsp Black pepper(optional)
  • 1 tbsp Neutral oil(optional)

Instructions

  1. 1

Wilt spinach in a skillet until all moisture evaporates; cool and squeeze dry, then chop finely.

  2. 2

In a bowl, mix spinach with cheddar (and cream cheese if using), garlic powder, onion powder, salt, and pepper.

  3. 3

Whisk eggs until smooth. Rest 5 minutes to reduce bubbles.

  4. 4

Heat a nonstick skillet over medium-low with a small amount of butter/oil. Pour a thin layer of egg to form a crepe-like base.

  5. 5

When the egg is set around the edges but still flexible, spoon a line of filling across the center and fold to form a pocket.

  6. 6

Cook 1–2 minutes per side until golden and the filling is hot and cohesive.

  7. 7

Repeat until all egg and filling are used. Slice diagonally for snack-size pieces.
