Ingredients

  • 10 Eggs
  • 10 oz Spinach
  • 1 cup Cheddar cheese
  • 2 tbsp Cream cheese(optional)
  • 1/3 cup Greek yogurt(optional)
  • 1 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1 tbsp Butter(optional)
  • 3/4 tsp Salt(optional)
  • 1/2 tsp Black pepper(optional)
  • 1 cup Cherry tomatoes(optional)
  • 1 tbsp Olive oil(optional)
  • 1 tbsp Balsamic vinegar(optional)

Instructions

  1. 1

Preheat oven to 350°F/175°C. Grease a baking dish (about 9x9 in / 23x23 cm).

  2. 2

Wilt spinach: cook spinach in a skillet with a tiny splash of water until just wilted; cool, then squeeze out excess moisture.

  3. 3

Whisk filling: in a bowl whisk eggs with garlic powder, onion powder, salt, pepper, and yogurt/cream cheese if using.

  4. 4

Assemble: fold in squeezed spinach and most of the cheddar. Pour into the baking dish and sprinkle remaining cheddar on top.

  5. 5

Bake: bake 28–35 minutes until set with a slight jiggle in the center.

  6. 6

Rest: cool 10 minutes for clean slices.

  7. 7

Serve with a quick side salad: toss cherry tomatoes with olive oil and balsamic; serve alongside.
