Ingredients

  • 8 eggs
  • 2 cups spinach
  • 8 slices bacon
  • 1/2 cup cheddar cheese (shredded)(optional)
  • 1 tbsp butter(optional)
  • 1/2 tsp garlic powder(optional)
  • 1/2 tsp black pepper(optional)
  • 1/4 tsp salt(optional)

Instructions

  1. 1

Cook bacon in a skillet until crisp. Remove bacon to a plate; crumble.

  2. 2

Drain excess fat, leaving a thin film. Add butter (if using) and sauté spinach until just wilted, 1–2 minutes.

  3. 3

Whisk eggs with salt, pepper, and garlic powder. Pour into the skillet over medium-low.

  4. 4

Stir slowly to form thick curds, scraping the bottom to prevent sticking, 6–8 minutes.

  5. 5

Fold in bacon crumbles and cheddar (if using). Cook until cheese melts and eggs are just set, 1–2 minutes.

  6. 6

Cool 5 minutes, then portion into 16 bite-size pieces (use a spoon or small cutter) and serve warm.
