Ingredients

  • 1 lb Ground turkey
  • 2 Eggs
  • 3 cloves Garlic
  • 2 tbsp Olive oil
  • 1 can (14 oz) Crushed tomatoes
  • 2 cups Cauliflower florets
  • 2 tsp Italian seasoning
  • 0.25 tsp Red pepper flakes
  • 1.5 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1

    Preheat oven to 400°F (205°C).

  2. 2

Mix turkey with 1 egg, minced garlic, salt, pepper, and half the Italian seasoning. Form into 12 meatballs.

  3. 3

Heat 1 tbsp olive oil in a skillet over medium-high. Sear meatballs 2–3 minutes per side until browned (they will finish in oven).

  4. 4

Transfer meatballs to a baking dish and bake 12–15 minutes until cooked through.

  5. 5

Make sauce: simmer cauliflower florets in a small pot with 1/2 cup water until very tender, 10–12 minutes. Blend until smooth.

  6. 6

In the same pot, heat remaining olive oil. Stir in crushed tomatoes, remaining Italian seasoning, red pepper flakes, and salt. Simmer 10 minutes.

  7. 7

Whisk in cauliflower puree to thicken; simmer 5 minutes.

  8. 8

Return meatballs to sauce and simmer 3–4 minutes. Rest 5 minutes before serving.
