Ingredients

  • 2 pounds Chicken wings
  • 1 tablespoon Smoked paprika
  • 1/2 cup Buffalo sauce
  • 4 tablespoons Unsalted butter
  • 1/2 cup Blue‑cheese crumbles
  • 1/4 cup Greek yogurt
  • 4 stalks Celery sticks
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1

Preheat the oven to 275°F (135°C). Arrange the chicken wings on a rack set over a baking sheet and season with smoked paprika, garlic powder, salt, and black pepper.

  2. 2

Bake the wings for 45 minutes to render fat and begin cooking, then increase the oven temperature to 425°F (220°C) and continue baking for another 45 minutes until the skin is crisp and browned.

  3. 3

While the wings finish cooking, melt the butter in a small saucepan over low heat, then whisk in the Buffalo sauce until smooth; keep warm.

  4. 4

Transfer the baked wings to a large bowl, pour the hot Buffalo‑butter mixture over them, and toss to coat evenly.

  5. 5

In a separate bowl, combine blue‑cheese crumbles, Greek yogurt, a pinch of salt, and a drizzle of the remaining Buffalo‑butter sauce to make the dressing.

  6. 6

Serve the wings hot with the blue‑cheese dressing on the side and celery sticks for crunch.
