Ingredients

  • 450 g Ground beef (80/20)
  • 2 large Eggs
  • 1 tbsp Olive oil
  • 2 cloves Garlic
  • 0.5 medium Onion(optional)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Smoked paprika(optional)
  • 2 tbsp Tomato paste
  • 1 tbsp Apple cider vinegar
  • 1 bag Spinach
  • 60 ml Water(optional)

Instructions

  1. 1

Preheat oven to 200°C / 400°F. Line a muffin tin with silicone liners or lightly oil.

  2. 2

In a bowl, mix ground beef, eggs, minced garlic, finely chopped onion (if using), salt, pepper, and smoked paprika.

  3. 3

Divide mixture into 6–9 muffin cups (depending on tin size). Press lightly so they hold shape.

  4. 4

Bake 20 minutes until mostly set.

  5. 5

Make spinach glaze: in a saucepan, wilt spinach with a splash of water. Blend or finely chop; stir in tomato paste and apple cider vinegar. Simmer 3–4 minutes.

  6. 6

Spoon glaze over meatloaf muffins and bake 10–12 minutes more until cooked through (internal temp 71°C / 160°F).

  7. 7

    Rest 5 minutes before serving.
