Ingredients

  • 12 oz ground beef
  • 6 oz ground pork
  • 1 tbsp olive oil
  • 1/2 medium yellow onion
  • 3 cloves garlic
  • 2 tsp Italian seasoning
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 24 oz marinara sauce (no sugar added if possible)
  • 6 oz spinach
  • 1 tsp arrowroot powder
  • 1 tbsp water

Instructions

  1. 1

    Preheat oven to 425°F (220°C).

  2. 2

Finely dice onion and mince garlic. Mix ground beef, ground pork, onion, garlic, Italian seasoning, salt, and pepper until evenly combined.

  3. 3

Form into 18–20 small meatballs. Place on a lined baking sheet and bake 14–16 minutes until browned.

  4. 4

Meanwhile, warm marinara in a saucepan over medium heat. Stir arrowroot powder with water, then whisk into marinara to slightly thicken (optional but helps coating).

  5. 5

Add baked meatballs to marinara and simmer 8–10 minutes.

  6. 6

Stir spinach into the sauce until wilted, then serve hot.
