Ingredients

  • 300 g Flank steak, thinly sliced
  • 2 cups Cauliflower rice
  • 1 Red bell pepper, sliced
  • 1 Green bell pepper, sliced
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Olive oil
  • 2 teaspoons Fajita seasoning (salt, pepper, paprika, cumin, garlic powder)
  • 1/4 cup Heavy cream
  • 2 tablespoons Fresh cilantro, chopped(optional)

Instructions

  1. 1

Preheat the oven to 190°C (375°F). Lightly grease a 9‑inch casserole dish.

  2. 2

In a skillet over medium‑high heat, add olive oil and sauté the sliced steak with half the fajita seasoning until browned, about 4‑5 minutes; set aside.

  3. 3

In the same skillet, add the sliced red and green peppers, the remaining fajita seasoning, and sauté until softened, about 3‑4 minutes.

  4. 4

While the vegetables cook, place cauliflower rice in a microwave‑safe bowl, cover, and microwave 3‑4 minutes until tender; let cool slightly.

  5. 5

Combine the cauliflower rice, heavy cream, and half of the shredded cheddar in a bowl; season with a pinch of salt and pepper.

  6. 6

Layer the casserole: spread the cauliflower‑cheese mixture as the bottom crust, top with the sautéed steak strips, then the peppers, and finally sprinkle the remaining cheddar over the top.

  7. 7

Bake in the preheated oven for 25‑30 minutes, until the cheese is melted and golden.

  8. 8

Remove from oven, let rest 5 minutes, garnish with chopped cilantro if desired, and serve.
