Ingredients

  • 10 slices bacon
  • 10 eggs
  • 1/4 cup heavy cream or half-and-half
  • 1 cup cheddar cheese (shredded)
  • 4 cups spinach
  • 1 tbsp butter
  • 1/2 tsp salt(optional)
  • 1/4 tsp black pepper(optional)

Instructions

  1. 1

Cook bacon in a large oven-safe skillet over medium heat until crisp. Remove bacon to a plate; leave about 1–2 tbsp drippings in the pan.

  2. 2

Chop bacon. Reduce heat to low.

  3. 3

Whisk eggs with cream, salt, and pepper. Add butter to the skillet and let it foam slightly.

  4. 4

Pour in eggs and stir slowly with a spatula, scraping the bottom and sides, until they begin to thicken but are still slightly soft.

  5. 5

Add cheddar and chopped bacon; stir until cheese melts and eggs are just set (do not overcook).

  6. 6

Fold in spinach (it will wilt from residual heat). Turn off heat and cover for 1 minute to finish gently.

  7. 7

    Serve immediately.
