Ingredients

  • 150 g buckwheat soba noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup(optional)
  • 1 tablespoon toasted sesame seeds
  • 2 stalks scallions (green onions), thinly sliced

Instructions

  1. 1

Bring a pot of water to a boil, add the soba noodles and cook according to package directions (usually 4–5 minutes). Drain and rinse under cold water to stop cooking and cool the noodles.

  2. 2

In a small bowl whisk together soy sauce, toasted sesame oil, rice vinegar, and honey (if using) until smooth.

  3. 3

Transfer the cooled noodles to a serving bowl, pour the dressing over them, and toss to coat evenly.

  4. 4

Sprinkle toasted sesame seeds and sliced scallions on top, then serve immediately or chill for up to 30 minutes.
