Cold Korean Sesame Noodle-Style Pasta

Ingredients

  • 180 g Pasta (spaghetti or linguine)
  • 2 tbsp Soy sauce
  • 1 tbsp Sesame oil
  • 1 tbsp Rice vinegar
  • 1 tsp Honey or sugar
  • 1 tbsp Toasted sesame seeds
  • 1 clove Garlic, minced
  • 1 tsp Ginger, grated(optional)
  • 1 cup Cucumber, thinly sliced
  • 1/2 cup Carrots, shredded
  • 1/4 tsp Optional: Korean gochugaru (red pepper flakes)(optional)

Instructions

    Cook the pasta in a pot of boiling salted water until al dente, about 10 minutes. Drain well.

    While the pasta cooks, whisk together soy sauce, sesame oil, rice vinegar, honey (or sugar), minced garlic, grated ginger (if using), and half the sesame seeds (plus gochugaru if you want heat).

    Toss the hot drained pasta with the sesame-soy sauce until evenly coated. Let it cool for about 10 minutes (or until no longer steaming).

    Chill the pasta in the refrigerator for at least 10 minutes, then serve topped with cucumber, shredded carrots, and the remaining sesame seeds.
