Ingredients

  • 2 cups Black Forbidden Rice
  • 3 tablespoons Miso Paste
  • 1 tablespoon Grated Ginger
  • 8 ounces Shiitake Mushrooms
  • 1 strip Kombu Seaweed
  • 1 large Watermelon Radish
  • 2 teaspoons Sesame Oil
  • 0.5 cup Micro-Greens(optional)
  • 2 tablespoons Soy Sauce
  • 3 minced Garlic Cloves

Instructions

    Rinse the black forbidden rice under cold water until the water runs clear.

    Boil the rice with the kombu strip in 4 cups of water for 20 minutes until tender.

    In a separate pan, sauté minced garlic and sliced shiitake mushrooms in sesame oil until golden.

    Whisk the miso paste with a small amount of warm water to create a smooth slurry.

    Remove the kombu from the rice and fold in the miso slurry and grated ginger.

    Thinly slice the watermelon radish into translucent rounds for the base garnish.
