Classic Vanilla Bean Panna Cotta

Ingredients
- 2 cups Heavy cream
- 1/3 cup Granulated sugar
- 1 whole Vanilla bean
- 2.25 tsp Powdered gelatin
- 3 tbsp Cold water
- 1 pinch Salt

In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5-10 minutes to bloom.

Split the vanilla bean lengthwise and scrape out the seeds.

In a medium saucepan, combine the heavy cream, sugar, salt, vanilla bean seeds, and the pod itself.

Heat the mixture over medium heat until it just begins to simmer, then remove from heat immediately. Do not boil.

Remove the vanilla bean pod. Add the bloomed gelatin to the warm cream and whisk until completely dissolved.

Pour the mixture into four ramekins or glasses.

Refrigerate for at least 4 hours, or until completely set and chilled.

To serve, run a thin knife around the edge of the ramekin and invert onto a plate, or serve directly in the glass.
