Ingredients

  • 2 large eggs
  • 1/4 cup soy sauce
  • 2 tablespoons mirin (sweet rice wine)
  • 1/4 cup water
  • 1 teaspoon sugar
  • 1 tablespoon green onion (optional garnish)(optional)

Instructions

  1. 1

Bring a pot of water to a boil, gently lower the eggs and boil for 7 minutes for a soft‑centered yolk.

  2. 2

While the eggs are cooking, combine soy sauce, mirin, water, and sugar in a small bowl; stir until the sugar dissolves.

  3. 3

After boiling, transfer the eggs to an ice‑water bath for 1 minute, then peel them.

  4. 4

Place the peeled eggs in a zip‑top bag or shallow container and pour the soy‑marinade over them, ensuring they are fully submerged.

  5. 5

Marinate in the refrigerator for at least 30 minutes (or up to 2 hours) before serving; slice in half and top ramen, optionally sprinkling with chopped green onion.
