Ingredients

  • 4 lbs Pork shoulder (butt)
  • 0.5 cup Orange juice
  • 2 tbsp Lime juice
  • 4 cloves Garlic
  • 1 tsp Dried oregano
  • 2 tsp Ground cumin
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 1 medium Onion
  • 1 Bay leaf

Instructions

  1. 1

Cut the pork shoulder into 2-inch cubes, discarding excess fat.

  2. 2

In a large heavy-bottomed pot or slow cooker, combine the pork, orange juice, lime juice, minced garlic, oregano, cumin, salt, pepper, chopped onion, and bay leaf.

  3. 3

If using a pot, cover and simmer on low heat for 3 to 4 hours until the meat is fork-tender. If using a slow cooker, cook on low for 8 hours or high for 4 hours.

  4. 4

Once tender, remove the meat from the liquid and shred it into large chunks using two forks.

  5. 5

Preheat your broiler to high. Spread the shredded pork onto a large baking sheet.

  6. 6

Drizzle 1/4 cup of the cooking liquid over the meat and broil for 5-8 minutes until the tips are crispy and browned.

  7. 7

Serve immediately with warm tortillas and fresh toppings.
