- 1.5 lbs Chicken thighs, boneless and skin-on
- 0.25 cup Soy sauce
- 0.25 cup Mirin
- 0.25 cup Sake
- 1 tablespoon Granulated sugar
- 1 teaspoon Grated ginger
- 1 tablespoon Vegetable oil
- 1 teaspoon Toasted sesame seeds(optional)
- 2 stalks Green onions, sliced(optional)

Pat the chicken thighs dry with paper towels and prick the skin with a fork to help the fat render.

In a small bowl, whisk together the soy sauce, mirin, sake, sugar, and grated ginger until the sugar is dissolved.

Heat the vegetable oil in a large skillet over medium-high heat.

Place the chicken skin-side down in the skillet and cook for 5-7 minutes until the skin is golden brown and crispy.

Flip the chicken and cook for another 4-5 minutes until cooked through; remove excess fat from the pan with a spoon or paper towel.

Pour the sauce mixture into the skillet and bring to a simmer over medium heat.

Baste the chicken continuously with the sauce as it thickens into a glossy glaze, about 2-3 minutes.
