Classic Bruschetta

Ingredients

  • 6 medium Roma tomatoes
  • 1/4 cup Fresh basil leaves
  • 3 cloves Garlic cloves
  • 1/4 cup Extra virgin olive oil
  • 1 tablespoon Balsamic glaze(optional)
  • 1 loaf Baguette
  • to taste Salt and black pepper

Instructions

    Dice the tomatoes and place them in a colander for 5 minutes to drain excess liquid.

    In a medium bowl, combine the drained tomatoes, finely minced garlic (2 cloves), chopped basil, and 2 tablespoons of olive oil.

    Season the tomato mixture with salt and pepper, then let it sit for 10 minutes to allow flavors to meld.

    Slice the baguette into 1/2-inch thick rounds and brush both sides lightly with the remaining olive oil.

    Toast the bread slices under a broiler or on a grill until golden brown on both sides.

    Rub the remaining raw garlic clove over the toasted surface of each bread slice for extra flavor.

    Spoon the tomato mixture onto the toasted bread and drizzle with balsamic glaze if desired. Serve immediately.
