Cinnamon Foxberry Doughnuts

Ingredients
- 3 1/2 cups All-purpose flour
- 1/2 cup Granulated sugar
- 1 cup Whole milk
- 4 tablespoons Unsalted butter, melted
- 2 1/4 teaspoons Active dry yeast
- 2 teaspoons Ground cinnamon
- 3/4 cup Lingonberry jam (Foxberries)
- 1 large Egg
- 1/2 teaspoon Salt
- 1 quart Vegetable oil for frying
- 1/4 cup Powdered sugar(optional)

Warm the milk to 110 degrees Fahrenheit and stir in the yeast and one tablespoon of sugar; let sit for 5 minutes until foamy.

In a large bowl, whisk together the flour, remaining sugar, cinnamon, and salt.

Add the yeast mixture, melted butter, and egg to the dry ingredients, mixing until a soft dough forms.

Knead the dough on a floured surface for 8 minutes, then place in a greased bowl and let rise for 1 hour until doubled in size.

Roll the dough out to 1/2 inch thickness and cut into circles using a doughnut cutter or glass.

Place a small teaspoon of foxberry jam in the center of half the circles, top with another circle, and pinch the edges firmly to seal.

Heat the oil to 350 degrees Fahrenheit and fry the doughnuts for 2-3 minutes per side until golden brown.
