Ingredients
- 1 cup Water
- 1/2 cup Unsalted butter
- 2 tablespoons Granulated sugar
- 1/4 teaspoon Salt
- 1 cup All-purpose flour
- 1 large Egg
- 1 teaspoon Vanilla extract
- 2 cups Vegetable oil
- 1 teaspoon Ground cinnamon
- 1/2 cup Dark chocolate chips
- 1/2 cup Heavy cream

In a medium saucepan, combine water, butter, 2 tablespoons sugar, and salt. Bring to a boil over medium-high heat.

Reduce heat to low and add flour all at once. Stir vigorously with a wooden spoon until a smooth dough ball forms and pulls away from the sides of the pan.

Remove from heat and let cool for 5 minutes. Beat in the egg and vanilla extract until the dough is smooth and glossy.

Transfer the dough to a piping bag fitted with a large star tip.

Heat oil in a heavy skillet to 375°F (190°C). Pipe 4-inch strips of dough into the hot oil, cutting the ends with scissors.

Fry until golden brown (about 2 minutes per side). Drain on paper towels.

Mix remaining sugar and cinnamon in a shallow bowl. Roll the warm churros in the mixture until coated.

For the ganache: Heat heavy cream until simmering, pour over chocolate chips, let sit for 1 minute, then stir until smooth. Serve alongside the churros.
