Chickpea Tikka Masala

Ingredients

  • 2 cans (15oz) Chickpeas
  • 1 can (15oz) Crushed Tomatoes
  • 1 can (13.5oz) Coconut Milk
  • 1 medium Yellow Onion
  • 3 cloves Garlic
  • 1 tablespoon Ginger
  • 1.5 tablespoons Garam Masala
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 0.25 cup Fresh Cilantro(optional)

Instructions

    Heat a large skillet over medium heat with a splash of oil. Sauté diced onion until translucent, about 5 minutes.

    Add minced garlic and ginger, cooking for 1 minute until fragrant.

    Stir in the garam masala, turmeric, and cumin. Toast the spices for 30 seconds.

    Pour in the crushed tomatoes and drained chickpeas. Simmer for 10 minutes to allow flavors to meld.

    Stir in the coconut milk and cook for another 5 minutes until the sauce thickens slightly.

    Season with salt to taste and garnish with fresh cilantro before serving over rice or with naan.
