Ingredients

  • 3/4 cup canned chickpeas
  • 1/2 cup short-grain rice
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 1 cup broccoli florets
  • 1 clove garlic
  • 1 tsp ginger(optional)
  • 1 tsp sesame seeds(optional)

Instructions

  1. 1

Cook the rice according to package directions while you prepare the rest.

  2. 2

Pat the chickpeas dry. Heat sesame oil in a skillet over medium-high heat and sear the chickpeas for 5-6 minutes until lightly crisped.

  3. 3

Add minced garlic and ginger, cooking for 30 seconds until fragrant.

  4. 4

Stir in soy sauce, mirin, and sugar; simmer 2-3 minutes until the sauce coats the chickpeas in a glossy glaze.

  5. 5

Steam or stir-fry the broccoli until bright green and tender-crisp.

  6. 6

Assemble the bowl with rice on the bottom, glazed chickpeas and broccoli on top, and finish with sesame seeds.
